Consistently eating truly healthy meals without strain. This simple challenge seems to be an eternal theme for modern people. One answer to this is the Japanese superfood, "nukazuke" (pickles fermented in rice bran). Nukazuke, which allows you to create functional food simply by adding vegetables, is a cooking method brimming with Japanese wisdom, and a nukadoko can be called a living cooking utensil.

In fact, a mere 1g of nukadoko contains 100 million lactic acid bacteria, along with 10 to 30 other types of beneficial bacteria coexisting. The length of the maturation period is proportional to the number of beneficial bacteria, and the taste of nukazuke also improves, so a nukadoko should be kept "long-lived."


This vessel, crafted from cedar and coated with lacquer, is a "nukazuke-specific container" that surpasses all others, possessing features not found in mainstream enamel, plastic, ceramic, or wooden barrel nukazuke containers.

Lacquer is stronger than common chemical paints, resistant to acids, alkalis, salt, and alcohol, and also boasts high water resistance and antiseptic properties. Its strong antibacterial properties also help maintain the cleanliness essential for a nukadoko.

The cedar base is well-ventilated, requires no drainage, and maintains appropriate humidity. This promotes fermentation and shortens pickling time. Its light weight is another welcome feature.

The interior bottom has an appropriate depth and roundness, making the basic care of "tenchi-gaeshi" (turning the nukadoko upside down) comfortable. The insulating effect of the air layers in the cedar and its natural drainage also help reduce troubles in summer.
